Have you ever tried Pickle Chips? They are my absolute favorite! The best I have ever had were at a restaurant in Texas called Wings and More. Yum! If you ever go there, you've got to order the Chicken Fried Steak and some wings...but first, order a basket of pickle chips. Oh my! So good!
I was really wanting some the other day, so I decided to make some. We've made them before, but I decided to try making them Gluten Free this time, so that they didn't bother my husband's allergies too. It's easy to make them either way. You just change the flour that you use.
First, I bought a HUGE jar of dill pickle slices! haha
Then I laid out some paper towels and started placing pickles down on the towels. You want the pickles to dry off some, in order to help the flour mixture to stick better.
Then I placed another paper towel over the top, and pressed lightly to help dry the excess juice/moisture off the top of the pickle slices.
If you want them even more dry, just let them sit out a bit longer.
Then mix up your flour mixture that will coat the pickles.
Pickle Chip Recipe:
1/2 cup almond meal
1/2 cup GF flour mixture or sorghum flour
(Really you can do any flour of your choice here!)
Add a pinch of salt and pepper
And I like to add a tad (about 1 tsp) of dry mustard and a bit of cayenne or chili powder as well! Yum!
Mix it all together, and then start adding your pickles and coating them with both sides.
The only thing left to do is to cook them now. If you are going to bake them, coat your pan lightly with a cooking spray or butter. You can also use a spray butter and spray the pickle chips lightly if you want.
If you are going to fry them, just pour a little bit of oil in your pan and put your pickles in. Make sure to turn them and cook them on both sides until they are crunchy.
They turn out soooooo good!
No matter how you eat them, or which flour you use (GF or not!), they are delicious! You've got to try them!
